Quinoa, tofu, zuchini and tomato casserole

This meal got me a hug and a “that was yummy, thank you mommy, I love you” from my 4.5 year old, and a licked clean bowl from my 18 month old! As this is not a regular ocurrence, I thought I would share. Recipe below:

Saute in a pan with oil : garlic (a full big clove), zuchini, fresh tomato, organic tofu and cook on low heat until the tomato becomes like a sauce. Cook quinioa in a separate pan and once finished, drain and mix all together! For those in Argentina, I added half a teaspoon of “mendicrem” (kind of like cream cheese) and mixed it in. Voila! A major hit.
